![]() | AUDIT - HYGIENE PLAN - CONTROLThe Royal Decree of 14/11/2003 makes self-inspection and traceability in the food chain compulsory. For food safety, the principle of self-inspection must be based on HACCP principles. Compliance with HACCP principles means the setting up of the hygiene plan. Each facility has its own rules and its own modus operandi. A good hygiene plan must take account of the specific features of the building, the premises, the organisation and the staff. From a clear, detailed and precise analysis of the situation in place, we offer you, on the one hand, an estimate of your cleaning product needs and the costs associated therewith. On the other hand, our team is available to support you in the actual production of a hygiene plan suitable for your situation in terms of the need for and frequency of cleaning. As part of the checking, REALCO can offer you measurements of the effectiveness of the cleaning implemented. The checking methods considered are ATP metrics and counting. They involve scientific methods acknowledged by the HACCP. They consist of an assessment of the overall microbiological condition of the surfaces. These measurements can be carried out for surfaces deemed to be critical or as part of the validation of a cleaning procedure. |
